Carrot Ginger Soup by milo6456

Ingredients

1 lbs carrots, sliced and peeled 1 tbs chopped fresh ginger 1 lg clove garlic, smashed 1/4 tsp crushed red pepper 1/2 tsp Kosher salt 4 c of water 2 tsp of lemon

Instructions

1. In large pot, simmer carrots and next 5 ingredients (through water), covered, until carrots are tender (20-25 min.)
2. Using immersion blender, blend until smooth; add lemon juice. Divide among 4 bowls; garnish w/ crushed red pepper and carrot leaves. If desired, serve chilled.
