Ingredients

1 1/4 cup coconut or canola oil 3 eggs 2 cups sugar (cream all together) 2 cups flour 2 tsp cinnamon 2 tsp baking soda 1 tsp vanilla 1 tsp salt ( cream together again ) 2 cups grated carrots 1 cup chopped walnuts 1 small can crushed pineapple ( drain juice ) 1/2 package flake coconut ( mix by hand ) FROSTING: 1/2 box confectioner sugar 1 stick butter 1 tsp vanilla or pineapple juice 1 tsp potato starch mix together and cover the cake when cold DECORATION: Carrot curls on top with carrot sharper

Instructions

pre heat oven to 350
grease and flour only the bottom
Mixi batter in 3 stages as above
needs to cook for 1 hour and 15" in tube ( ciambellone ) pan
Let it cool before removing
