Chicken Spinach Salad by mcushman

Ingredients

Salad: 1 bag spinach 1 c. cherry tomatoes 1/2 c. corn 1 1/2 c. cooked chicken 1 large avocado 1/3 c. feta 1/4 c. toasted pine nuts Dressing: 3 TBSP white wine vinegar 2 TBSP virgin olive oil 1 TBSP Dijon mustard salt and pepper

Instructions

Slice spinach into slivers. Add tomatoes and corn. Add avocado and chopped cooked chicken. Add goat cheese or feta and pine nuts. Top with Dijon vinagarette.
