Lamb Rhubarb Stew by maxwellhill

Ingredients

Lamb 1lb Rhubarb 2 sticks Roiboos tea Shallot Garlic 2 cloves Carrot 3 Red Potatoes Mint Star Anise Turmeric Ground Coriander Cumin Seeds red wine Couscous Coriander Chilli flakes

Instructions

Fry shallots then briefly add mint and garlic. Remove fro pan and add to slow cooker
Brown lamb with tumeric, coriander and cumin seeds then add to slow cooker
Fry rhubarb in same pan and add roiboos tea and star anise, add carrots then add to slowcooker. Add potatoes too plus some stock and a splash of red wine.
