Ingredients

zest and juice of one lemon 2 garlic cloves fresh coriander mint splash of soy sauce olive oil salt and pepper sour cream/creme fraiche rice broccoli shallot salmon fillet

Instructions

put the rice on steaming the broccoli on top
everything but the shallot, salmon and a fraction of the garlic goes in the salsa verde
get the shallots frying. once browning throw in the remaining garlic and salmon with a sprinkle of the salsa verde on top. cook to taste, i find a very rare fillet adds more to the flavour
dish out the rice, salmon and shallots on top, dollop on some cream then salsa verde on top. broccoli on the side.
