Pasta Salad by
Ingredients
1 zucchini
2 on vine tomatoes
1 onion
1 cucumber
3 tbs lemon juice
2 tbs apple cider vinegar
3/4 cup avocado oil mayonnaise
3 cups pasta
1 cup cut spinach
2 tbs dill weed
2 tbs olive oil
1 tbs salt
1 tbs pepper
1 tbs basil
Instructions
1. Cook pasta to al dente, rinse with cool water, and drain
2. combine all vegetables except zucchini in bowl
3. cook zucchini in olive oil for 5 min
4. add zucchini and pasta to bowl
5. In small bowl combine olive oil, lemon juice, vinegar, and all seasonings
6. pour sauce over pasta and vegetables, and mix
7. Eat then, or refrigerate overnight
