Mashed Potato Pancakes by louise

Ingredients

2-3 cups leftover mashed potatoes about 1/4 cp flour 1/2 cp grated cheddar cheese 3 tblsp finely chopped onion 1 egg slightly beaten

Instructions

Combine all ingredients and form into 1 1/2-2 inch balls. Heat a skillet, add oil. When oil is hot, place balls in oil over medium heat(do not overcrowd) After about a minute,flatten balls into patties. After about 4-5 more minutes, carefully flip and cook for 5 more minutes. Remove and serve. Great with apple sauce or sour cream.
