Avocado & corn salsa by louise

Can also be used over grilled chicken or fish.


2 ripe avocados (peeled, seeded, and cut into small cubes) 1/2 cp fresh lime juice 1 lg ripe tomato (diced) or grape tomatoes (diced) sm can of corn (drained) 1/2 red onion (chopped) 1/4 cp fresh cilantro (chopped) 1/2 teasp salt 1 tblsp sugar 3 tblsp evoo


Whisk lime juice, olive oil, sugar and salt in a bowl until blended. Add avocados, tomatoes, corn, red onion and cilantro.
Can be chilled or served at room temperature.
