Divinity Fudge by Lori Bogan-Potts

Ingredients

2 cups sugar 1/2 cup light corn syrup 1/2 cup water 2 egg whites 1 teaspoon vanilla 1/2 cup nuts (pecans or walnuts)

Instructions

Cook sugar, syrup and water to 240°, stirring occasionally. Add syrup to beaten egg white pouring slowly and heating constantly.

When it begins to thicken, add chopped nuts. Drop from spoon on waxed paper. (To keep mix from getting too hard, set pan in some hot water while spooning.)

IMPORTANT: Do not even attempt to make Divinity Candy unless the humidity level is less than 50 to 60%. The humidity level can make or break your Divinity Candy.
