Crockpot Lasagna by latsyrk27

Ingredients

1 to 2 lbs hamburger (depends how meaty you like it) 1 to 2 jars of spaghetti sauce fresh garlic (or the canned stuff that is already minced - but don't just do garlic powder - there is a huge difference) extra Italian seasoning to your taste (1 TBS of The Pampered Chef Italian Seasoning or 3/4 TBS basil & 1/4 TBS oregano) Larger container cottage cheese about 3-4 cups shredded mozzarella cheese 1/2 to 1 cup shredded Parmesan cheese (freshly graded from a block of Parmesan is best here. . .but we've done it with the shaker stuff too) regular lasagna noodles (don't cook these ahead of time)

Instructions

Brown hamburger, drain.
combine hamburger, spaghetti sauce, 1 to 2 cloves minced garlic, & seasoning to taste in large skillet or saucepan (why dirty another one - just use the one you used to brown the meat!)
In separate bowl, combine cottage cheese, moz cheese, & parmesan cheese. If you're feeling sassy, throw some basil & oregano in here too. . .
With large spoon, put a layer of meat sauce in bottom of crockpot.
Then place a layer of lasagna noodles over meat, breaking some in half to cover meat. Don't worry if some meat is showing.
Layer cheese mixture over noodles.
Repeat Meat, noodles, then cheese layers until fill crockpot.
I usually try to top with cheese layer - so try to plan accordingly. This isn't a perfect recipe - so don't worry. You can always throw some extra moz cheese on the top if you need to.
Some people add water to this recipe - we don't. Tends to get too watery then.

You can also add 1/2 cup or so of chopped onion, chopped spinach and/or zucchini. . . why not hide more veggies in there, right?

Turn crockpot on low & let cook for approx 5-6 hours or so. YUM! If you only have 4 hours - turn it on high. . .just don't forget to plug in the crockpot! If it's on high - watch it towards that 4th hour - you may have to turn to low.
Enjoy!
