Ingredients
4 sirloin steaks
0.6 oz butter
4 oz white wine
8 tsp beef demi-glace
1/2 oz dijon mustard
Instructions
Cook steaks in 1 tsp olive oil on Med/High heat until 145F (3-4 min/side). Remove and cover. Reserve pan.
Return pan to medium heat, melt butter. Add shallots and stir occasionally (1-2 min). Add white wine and cook 1-2 min. Add demi-glace and dijon and stir until thick (1-2 min).
Drizzle steak with sauce.
