Blue Cheese Mashed Cauliflower by klcallic

Ingredients

2 cauliflower heads 2 oz blue cheese crumbles 8 oz 2% milk 0.6 oz butter 6 chives

Instructions

Break cauliflower down into large florets. Add to boiling water until tender (6-8 min). Mince chives.

Drain and return to pot. Add blue cheese, half of the milk, butter, and chives. Mash and add 1 tbs milk at a time until desired consistency is reached.
