32 oz fresh sweet potatoes 2 oz blue cheese crumbles 0.6 oz butter 1/2 oz parsley

Instructions

Preheat oven to 425F. Cut sweet potatoes into 1/4" dice. Stem and mince parsley.

Melt butter over medium heat. Add sweet potatoes and stir occasionally until lightly browned (4-6 min). Season with half the parsley, salt, and pepper. Roast in oven until tender (18-20 min).

Top with blue cheese and remaining parsley.
