Ingredients

== Vegetable Mix == 1 tbsp Extra Virgin Olive Oil 6 oz Green Onions 2 oz Celery, Raw == Vegetable Mix Seasoning == 1 tbsp Minced Garlic 1 tsp Oregano 1 tsp Chili Powder == Meat Mixture == 2 lbs Ground Beef, 80% 4 oz 4 Cheese Mexican Blend Shredded Cheese 1/2 cup Almond Flour 1 oz Parmesan Cheese 2 Eggs 1 tbsp Soy Sauce 1 tsp Salt 1 tsp Black Pepper == 6 Thick Cut Bacon

Instructions

1. Preheat oven to 400°.
2. Grease a medium baking dish with cooking spray. In a medium skillet over medium heat, heat oil.

3. Add onion and celery and cook until soft, 5 minutes.
4. Stir in garlic, oregano, and chili powder and cook until fragrant, 1 minute.
5. Let mixture cool slightly.

6. In a large bowl, combine ground beef, vegetable mixture, cheese, almond flour, Parmesan, eggs, soy sauce, and season with salt and pepper.
7. Shape into a large loaf in baking dish, then lay bacon slices on top.

8. Cook until bacon is crispy and beef is cooked through, about 1 hour.
