Mexican Wraps (Vegetarian) by Kira Matrejek

Ingredients

1 can black soybeans, rinsed & drained 1 cup frozen corn 1 can Ro-Tel diced tomatos, drained 2 cups chopped fresh spinach 2 cloves garlic, chopped 2 ozs sliced monterey jack cheese w/ peppers 1 fresh jalapeno, diced 1 tbsp olive oil

Instructions

Add 1 tbsp olive oil to nonstick skillet. Add jalapeno; sautee over medium heat until softened. Add garlic and spinach; sautee until spinach softens. Add corn, beans, and Ro-Tel. Stir until heated. Add cheese; stir until cheese melts. Serve over fatfree tortillas.

Servings: 6 Serving Size: 1/2 cup bean mixture
