Fried Rice by Kira Matrejek

A delicious vegetarian fried rice. Could probably get by with only 1 tbsp olive oil.

Ingredients

2 cups cold cooked rice 1/2 cup chopped onion 1 garlic clove, chopped 1 cup bean sprouts 1/4 cup chopped snow peas 1-2 stalks green onion (stem and top), chopped 2 tbsp olive oil 3 tbsb soy sauce

Instructions

Add 1 tbsp olive oil to skillet. Sautee onions, bean sprouts, and snow peas until onion turns translucent. Add 1 tbsp olive oil, rice, green onions, and soy sauce; stir well, until rice is warm.

Servings: 2 Serving Size: 1 cup
