Dark Brown Sugar Cookies by kaelinb

Ingredients

-1/2 cup coconut oil, softened -1 cup dark brown sugar -1 large egg -2 TB vanilla extract (yes, tablespoons) -1 TB unsulphered mild to medium molasses -1 3/4 cup flour -2 tsp. cornstarch -1 tsp. baking soda -1/4 tsp salt (optional)

Instructions

Use a mixer to beat coconut oil, egg, and sugar until light and fluffy (4-5 min.) Add the vanilla, molasses, and beat to incorporate, 1-2 minutes. Add the flour, cornstarch, baking soda, optional salt, and mix until combined. Form mounds about 2 heaping TB. in size and place on a large plate. Cover with plastic wrap and refigerate for at least 2 hours and up to 5 days (NECESSARY or else they'll spread). Preheat oven to 350F, line a baking sheet with parchment paper OR cooking spray. Bake for 8 minutes until tops have just set, even if undercooked in center. (They firm up when cooling). Allow to cool 5-10 minutes.
