Fabulous Butter Biscuits by
4 1/2 - 5 c flour 1 tbsp sugar 4 slightly beaten eggs 1 c milk 1 tsp salt 8 tsp baking powder 1 1/3 c chilled butter
Combine flour, salt, sugar, and baking powder. Cut in butter until well blended. Add eggs and milk. Stir until mixed. Turn out on floured surface; knead until smooth. Using a dusting of flour, roll dough out to 12x26 inches. Fold dough in three overlapping sides towards centre, then fold the top down to the bottom. Roll out the dough again and repeat the folding twice more. The rolling and folding is the secret to this biscuit. Don't be afraid to handle the dough. Roll out the dough to 3/4 inch thickness; cut biscuits. Place on a cookie sheet and bake at 475F for 10 minutes or so.
