Cheesy Zucchini Quiche (Crustless) * by cpeirson


2 med zucchini, shredded and drained 1/2 c sweet onions, finely chopped 1/4 c chives, finely chopped 2 c shredded mozzarella 2 c shredded cheddar cheese 1/2 c flour 1 t baking powder 2/3 c milk 1 t EVOO 3 large eggs beaten s&p to taste grated Parmesan cheese


Preheat oven to 400 and spray 9x9 baking dish with cooking spray.

In large bowl, combine flour and baking powder. Add in eggs, milk, evoo, salt, pepper. Mix well. Add in zucchini, onions, chives, and grated cheeses. Mix well.

Pour into prepared pan and top with Parmesan cheese.

Bake for 30 min or until knife comes out clean. Let stand 5 min and serve hot.
