Parmesan-Onion Roasted Potatoes by cpeirson


1.5 lb honey gold potatoes, halved 1/4 cup olive oil 1 envelope (1 oz) onion soup mix 1/2 cup parmesan plus additional for garnish chopped parsley for garnish


Preheat oven to 425 degrees. Add all ingredients to a large gallon bags and shake well to coat. Pour in a single layer on a well greased 9 by 13 casserole dish. Cover with aluminum foil and roast for 25 minutes covered, then 20 minutes uncovered. Garnish with additional parmesan if desired. Sprinkle with parsley.
