Spring Pea Salad by cpeirson

Ingredients

1 T capers 1 small shallot, thinly sliced 1 t grated lemon zest 1/4 c evoo 1/8 t salt 1/4 t pepper 1 lb fresh peas, blanched (or thawed if frozen) 4 oz crumbled goat cheese

Instructions

I med bowl, combine capers, shallot, zest, evoo, s&p. Add the peas and goat cheese and toss gently. Serve at room temp.
