Tortellini with Bacon, Greens, and Browned Butter by cpeirson

Ingredients

1 lb cheese or meat tortellini 4 oz sliced bacon 6 T unsalted butter 2 c arugula (1 bunch) 1/4 t kosher salt 1/4 t pepper

Instructions

Cook the tortellini according to directions. Meanwhile, cook the bacon in a large skillet until crisp. Reserve the bacon and discard the drippings. Wipe out skillet and return to med heat, Add the butter and brown. Remove from heat. Break the bacon into small pieces and add to skillet with the arugula, s, p and tortellini. Toss well and serve.
