Minnesota Heartland Soup (Betty) by cpeirson

Ingredients

1 pkg navy beans 3 qts water 1 T salt 1 hamhock bouquet garni 1 lg can tomatoes 2 c chopped onion 2 c chopped celery 1 chopped green pepper 2 cloves garlic, minced 1lb sliced smoked sausage 2 whole, raw, boness chicken breasts (cut in small pieces) 2 c wild rice chopped parsley for garnish

Instructions

Cover beans and soak overnight.

Rinse and drain beans. In large pot add beans, water, salt, hamhock and bouquet garni. Cover and simmer 3 hrs.

Add tomatoes, onion, celery, green pepper and garlic. Simmer uncovered for 1 1/2 hrs.

Add sausage, chicken, and rice. Cover and simmer 40 minutes.

Garnish with parsley.
