Salisbury steak with mashed potatoes and peas by janine

Ingredients

• 1 pound to 1 1/2 pounds of russet or red skin potatoes • 1 container of chicken broth or stock • If no stock 1 cube of chicken bullion cube • pinch of salt for your water • splash of milk • half a stick of butter or margarine • 1-2 teaspoons of sour cream • • Ingredients for Salisbury steak 1-2 pounds of lean ground beef depending on how many people you are serving • 1 packet of dried French onion soup mix • 1 teaspoon of seasoning salt • 1 teaspoon of meat tenderizer • 1 -2 cans of Campbells beef gravy or 1-2 jars of mushroom gravy • 1-2 cans of mushrooms • 1/4 cup to 1/2 cup of bread crumbs • 1-2 beaten eggs for peas 1-2 bags of frozen peas • 2 teaspoons of butter or margarine

Large frying pan with a lid- if making 8 -10 patties two frying pans with lids to make sure all of the patties can fit
Spatula

Ingredients listed above

Plate with paper towels to drain the meat

Bowl with tin foil to drain grease

Large mixing bowl

Bowl and spoon to beat the egg
Supplies for mashed potatoes

1-2 pounds of potatoes russet or red

Large pot

Strainer

Knife to cut the potatoes into cubes

Cutting board

Ingredients above

Potato peeler

Hand or stand mixer

Or potato peeler
Supplies for peas

Microwave

Butter

Container to put the peas in

Instructions it is best to start the potatoes as they take longer to cook

Rinse your potatoes and then peel the skin rinse again

Cut into uniform cubes so it cooks evenly

Add enough chicken broth or stock to cover the potatoes

If using the bullion cube , add enough cold water to cover the potatoes and add the cube

Bring broth and potatoes, or water and cube and potatoes to a boil on high add salt no matter what method you use to make the water boil faster

Once boiling turn down to medium heat and boil for 30 minutes

Drain your potatoes and add to pot if using a hand mixer or potato masher

If using a stand mixer add drained potatoes into the mixer

Mash potatoes with either method listed above then add milk, butter and sour cream and mash until desired consistency . If mashed in stand mixer return to pot cover and keep warm until ready to serve

Instructions for Salisbury steak

Once the potatoes have boiled for ten minutes add meat and seasonings and onion soup mix to a large mixing bowl along with eggs and breadcrumbs.
If only using a pound of ground beef only need beaten egg, and 1/4 cup of bread crumbs.

If using two pounds use two beaten eggs and 1/2 cup of bread crumbs but the same amount of dry onion soup mix for the one or two pounds of meat

Mix all ingredients together and shape into patties .

Heat your frying pan or pans up to medium heat once hot add the patties and brown on each side for 6 minutes

Drain meat on paper towels

Drain grease

Add back to frying pan or pans add the beef gravy and canned mushrooms or mushroom gravy and canned mushrooms and bring to a boil

Once boiling turn heat to low cover and simmer for 20 minutes and until patties are 165 internally
Instructions for the peas put 1-2 bags in microwave and microwave according to the package once done add to a container and add butter and mix. cover to keep warm until ready plate everything and serve
