Turkey Vegetable Soup by BR Hahn

Ingredients

4 T. butter 1 medium onion 1 tsp. curry 3+ cups rich turkey broth 2+ cups cut up cooked turkey 1/2 cup carrots, chopped 1/2 cup celery, chopped 1 cup potatoes, cubed 2 T. parsley, chopped(can be dry) 1/2 tsp. poultry seasoning salt & pepper to taste 1 pkg. frozen chopped spinach 1 can (13 oz)evaporated milk 2 TBS. flour

Instructions

Melt margarine in large pot. Saute onion until transparent, stir in curry powder. Add broth, carrots, celery, potatoes, parsley, poultry seasoning, salt & pepper. Bring to a boil and simmer 10 minutes. Add spinach(frozen)& turkey meat. Cover & cook 10-15 minutes more. In separate bowl mix flour with evaporated milk. Stir mixture into soup. Correct seasoning if necessary.
