Shipwreck Casserole by brishar02

Ingredients

1 lb. ground beef 1 1/2 c. cooked rice (I used 1 boil in bag and it was just enough) 1 1/2 c. frozen mixed veggies, thawed 1 small onion, chopped 2 cloves garlic, minced 1 14.5oz. can diced tomatoes, undrained 1 can cream of mushroom soup 2 c. shredded sharp cheddar cheese 1/4 tsp. salt 1/4 tsp. pepper pinch of cayenne pepper

Instructions

Brown ground beef and drain grease, add in onions and garlic and cook for 3-4 minutes. Then add mixed veggies, diced tomatoes, soup and seasonings. Cook for 5 minutes and add in 1/2. cup of the cheese. Pour into a lightly greased casserole dish and bake for 20 minutes at 350 degrees. Remove and top with remaining cheese and return to oven for 10 more minutes. Let sit 5 minutes before serving.
