Pistachio Crusted Chicken by TRobinson

Ingredients

3/4 cup pistachios (meat only) 2 eggs salt & pepper to taste 4 chicken breasts

Instructions

Chop pistachios in a food processor or with a knife, then add to a shallow bowl.

Whisk eggs, salt & pepper in another shallow bowl.

Using tongs, dip each chicken breast in egg, then roll in pistachios.

Place chicken on baking sheet sprayed with non-stick spray. Bake at 400 dregrees for 15-20 minutes or until chicken is cooked thorugh.
