Cheese & Broccoli Stuffed Chicken by SynDee

Ingredients

2 boneless, skinless chicken breasts 1/2 cup cooked chopped broccoli 4 slices cheddar cheese (1/4”x4”) 1/8 tsp. white pepper 1/4 tsp. salt 1 cup fresh breadcrumbs 1 egg, beaten 1 tbsp. water

Instructions

Preheat oven to 375 F.

Place the chicken, one piece at a time into a re-sealable plastic bag. Using a cooking mallet or heavy rolling pin, pound the chicken flat to about 1/4" thick.

Remove the chicken from the bag and sprinkle both sides with salt and pepper.

Place 2 slices of cheddar on each breast. Top each with half the broccoli. Roll up like an eggroll. Fold sides in over filling about 1/2 inch then roll front to back.

In a shallow dish, whisk the eggs and water. Spread the bread crumbs onto a flat plate. Carefully dip the chicken roll-ups in the egg whites and roll in the bread crumbs.

Place on a greased baking sheet seam side down, and bake for 30-35 minutes till nicely golden. You can also deep fry 7 – 10 min. if desired.
