Grilled Butternut and Bacon by Simon

1 butternut 15-20 good quality streaky bacon Bunch of rosemary sprigs 2-3 tblspn honey 250g feta Salt and pepper olive oil


Preheat oven to 200 degrees/ gas mark 6

Peel and slice butternut to about 1cm thick and place on oven tray.

Place bacon on top of butternut slices. Perhaps 1 piece per 2 slices of butternut...

Scatter diced feta and rosemary and generously drizzle honey and olive oil over oven tray.

Place in oven and cook for 30min or until pumpkin is soft. Finish off under grill for 3-4mins to crisp up feta and bacon if required.
