I usually don’t use half and half but regular 1% milk.

Ingredients

3 TBSP Butter 1/2 Cup Chopped Onion 1 TSP Minced Garlic 1/4 Cup Flour 4 Cups Chicken Broth 1/4 TSP Thyme 1 TSP Basil 1/2 TSP Oregano 2 TSP Chili Powder 1 TSP Salt 1/2 TSP Pepper 1 Cup Chopped Mushroom 1 1/2 Cup Chicken, cooked & shredded 2 Cups Spinach 4 Lasagna Noodles Broken into Pieces 2 Cups of Half and Half 1 Cup Parmesan Cheese, Grated

Instructions

On medium heat, melt butter in a large saucepan. Sauté onion and minced garlic in the butter for 3-5 minutes till translucent. stir flour into saucepan constantly and mix for 1-2 minutes until mixture resembles a paste. Stir in chicken broth until smooth. Add thyme, basil, oregano, chili powder, salt and pepper and stir until combined. Bring mixture to a low boil and add mushrooms, chicken, spinach, noodles, and half and half. Stir constantly under medium heat until boiling. Turn heat to low, cover the saucepan, and allow to simmer for 20 minutes. Take off heat and stir in Parmesan Cheese. serve warm.
