Roasted Chicken and Bow Tie Pasta Salad by ReliefSociety

Ingredients

3 c (8 oz) uncooked bow-tie pasta 2/3 c orange juice 1/2 c lemon juice 4 T olive oil 2 T mustard 4 t sugar 2 1/2 t salt 1 t pepper 3 t rice vinegar 2 c shredded and cooked chicken breast 1 1/2 c red grapes, halved 1 c spinach 1/3 c red onions, chopped 1/3 c walnuts, chopped 3 T chives, chopped 2 T parsley, chopped

Instructions

1. Boil chicken breast in water or chicken broth for 30 mins +/-. Shred
2. Cook pasta according to pkg. Cool completely
3. Combine OJ, lemon juice, olive oil, mustard, sugar, salt, pepper, and rice vinegar together in a medium bowl.
3. Mix together pasta, chicken, grapes, spinach, onion, walnuts, chives, and parsley in a large bowl.
4. Add sauce to the pasta mixture. Mix well.
5. may need to add more salt and pepper to taste.
