Green Chile Quiche by ReliefSociety

Ingredients

10-12 eggs 1/2 cup flour 1 teaspoon baking powder Dash of salt and pepper 1/4 cup butter, melted 4 ounce can chopped green chiles 1 pint cottage cheese 10-16 ounces Monterrey Jack cheese, shredded 1 tomato, chopped Chopped ham or ground sausagw to taste (I just use one tube Jimmy Dean original)

Instructions

Beat eggs lightly. Add flour, baking powder, salt and pepper and mix well. Mix in butter, chiles, cottage cheese and Jack cheese. Next fold in tomatoes and meat. Pour into a 9 x 13 glass pan (it cooks better in glass).

Bake at 400 for 15 minutes, then reduce temperature to 350 and cook for 25-30 minutes longer. Serve warm or cold! We love blueberry muffins and fresh fruit with this quiche.
