Potato & Onion Pancakes by
Ingredients
1.5 lbs potatoes (about 4 cups) peeled & shredded
3 T all-purpose flour
1/4 c butter
1 lrg egg
1 envelope onion soup mix (not instant)
Instructions
Mix all ingredients except the butter in a large bowl.
In a heavy 10" skillet, melt butter over medium heat.
When hot enough, drop 1/4 capfuls potato mix several inches apart into butter.
Cook 3 minutes on each side until brown.
Drain on paper towel.
Yields: approx. 12
