Zucchini bread by Marth


3 cups Flour 3 Eggs 1 cup Salad oil 2 cups Sugar 1 t. Vanilla 1 t. Baking soda t. Baking powder 1 t. Cinnamon 2 cups Grated zucchini (Do not pare, but trim ends) 1 cup Chopped nuts or raisins, or up to 1 cup of each


Preheat oven to 350. Grease 2 9 x 5 loaf pans.
Sift flour into medium bowl and set aside.
In large bowl, beat eggs and oil together. Add the sugar and vanilla and beat again.
Add the flour, baking soda, baking powder and cinnamon. Stir until well blended.
Fold in the grated zucchini, nuts and/or raisins.
Pour batter into prepared pans and bake for 50 minutes.
Let cool in pans on wire rack for 2 hours, then store in plastic wrap.
