Pumpkin bread by Marth

Makes delicious muffins.


4 Eggs 2 cups Sugar 1-1/4 cups Oil 2 cups Flour 1 t. Salt 1 t. Baking soda 3 t. Cinnamon 2 cups Canned pumpkin cup Chopped walnuts cup Raisins


Preheat oven to 350. Grease 2 9 x 5 loaf pans.
In large mixing bowl, beat eggs well. Add sugar and oil, beating after each addition.
Sift flour, salt, soda and cinnamon together in large bowl. Fold into liquid mixture.
Add pumpkin to batter and mix well. Stir in nuts and raisins.
Divide batter and pour into pans. Bake for 1 hour. Test if done with toothpick.
When somewhat cool, remove from pans and finish cooling on racks.
