Black- eyed Pea Dip by LoLo


1 1/2 cups dried black-eyed peas 2 cloves garlic, chopped 4 oz. cream cheese 1 tsp. cayenne 1 tsp. chili powder 1 1/2 cups shredded cheddar 1 bunch scallions, thinly sliced Tortilla chips


Cook beans in 6 cups water with garlic until tender. (2-3 hrs.) drain.
Process with cream cheese and spices. Place in a prepared serving casserole, top with cheddar and bake until cheese is melted. Top with onion and serve with tortilla chips, pita or bread sticks.
