Taco Bites by LoLo

These things disappear!

Ingredients

1 onion, chopped 1 lb. ground beef 1 pkg. taco seasoning 8 oz. shredded cheddar 1 pkg. flour tortillas 1 jar salsa 1 jar sliced jalapeņos 3" pastry cutter 2 mini muffin tins (24 count)

Instructions

Brown meat- drain well. Add onion, seasoning and water. Simmer until liquid evaporates. Chill. Cut tortillas with pastry cutter into 48 rounds. Place in a Baggie & microwave them for 30 seconds just to soften. Gently press them into muffin tins. Spoon a little meat, a little salsa and a little cheese into each one. Top some of them with a jalapeņo.
Bake in 400 F oven for 8 minutes or until a bit crispy on bottom and cheese is well melted. Remove to serving tray with a side of sour cream. Yummy!
