Ingredients

2.5 pounds ground beef 12 oz bacon (I use bacon bits) 2 minced garlic cloves 1/2 Tablespoons onion powder 2 diced green bell peppers 28 oz Rotel diced tomatoes 28 oz crushed tomatoes 2 Tablespoons cumin 4 Tablespoons chili powder 2 teaspoons salt 1 teaspoon cayenne 1 teaspoon smoked paprika 3/4 Tablespoon unsweetened cocoa powder 1 cup water

Instructions

Cook the bacon and cut it up into bite size pieces. In a soup pot, brown the ground beef. Do not drain. Add the bacon, garlic, onion powder, and bell peppers. Cook for 5 minutes, stirring regularly. Add all other seasonings and water. Don't skip the cocoa power - it adds real depth to the flavor. You can use ground coffee instead if you don't have cocoa powder. Cover and simmer half an hour. Tastes even better the next day.
