Stuffed Manicotti by Gerri

Ingredients

1 1/2 lb Ricotta Cheese (15 oz container) 2 eggs, beaten 2/3 C parmesan cheese 1 tsp parsley 1 lb mozzarella cheese Spaghetti sauce 1-2 jars

Instructions

Cook Manicotti shells to al denti - gently strain and set aside
place half of spaghetti sauce on bottom of casserole dish

Mix together Ricotta, eggs, parmesan cheese, parsley, 1/2 of mozzarella

Stuff each manicotti shell with cheese mixture and place in casserole dish - cover shells with the rest of sauce

Cover shells with foil and cook at 350 for 30-40 minutes.

Last 10 minutes, uncover top with rest of cheese to melt on top
