Ingredients

120g butter 120g light brown sugar 1 large egg 1/2 teaspoon vanilla extract 100g flour 1/2 teaspoon bicarb 1/2 teaspoon cinnamon 1/4 teaspoon salt 120g oats 120g raisins

Instructions

Mix together the butter, sugar, egg and vanilla until smooth.

In another bowl, whisk the flour, bicarb, cinnamon and salt.

Stir this into the butter/sugar mixture.

Add the oats and raisins.

Chill the dough.

Scoop the chilled dough onto a tray.

Put in the oven at 175°C for 10 to 12 minutes.

Let them sit on the tray for 5 minutes before moving to a cooling rack.
