Arugula Salad w/ Fig, Goat Cheese & Honey Balsamic Vinaigrette by ChefNg

Ingredients

Yields 2 servings: 3 cups baby arugula 4 fresh figs, peeled & quartered 1 tbsp. toasted pine nuts Soft goat cheese 1/3 cup balsamic vinegar 1/8 cup honey 1/8 cup olive oil 1/2 tsp. soy sauce

Instructions

1. Whisk together the vinegar, honey, olive oil, and soy sauce until the honey has dissolved & the dressing is smooth

2. Toss arugula, pine-nuts & dressing together in a bowl

3. Add figs & goat cheese and lightly toss before serving


Notes:
* Can replace figs with dried cranberries

* Can replace pine nuts with sliced almonds
