Biscuits - Honey Biscuits by Catherine Dunn

Ingredients

1 cup honey 1 cup sugar 1 tbspn butter 1/2 cup water 1 1/2 tspn bicarb soda 1 egg 2tsp mixed spice 2 cups self raising flour 2 cups plain flour

Instructions

Heat honey, sugar and butter until melted. Add water and bicarb to honey mixture. Let this stand until luke warm and then add well beaten egg, mixed spice and the flours. Mix well. Cover bowl with gladwrap and leave overnight. This makes the mixtyre less sticky when you roll and cut out the biscuits. Roll mixture flat and cut out with cookie cutters. Bake in moderate-hot oven for 10-15 minutes. Makes 2-3 dozen. Great to make gingerbread men or Christmas biscuits.
