Muffins - Carrot and Zucchini by Catherine Dunn

Ingredients

2 cups Self-raising flour 1/2 cup brown sugar (firmly packed) 1/2 tspn B-Carb soda 1 tspn cinnamon 1 cup grated carrot (lightly packed) 1 cup grated zucchini (lightly packed) 1/2 cup chopped walnuts/sultanas 2 eggs 3/4 cup milk 90g butter melted

Instructions

Preheat oven to 180 degrees Celsius.

Put flour, sugar, soda and cinnamon into a bowl. mix in carrots, zucchini and walnuts.

Make a well in the centre of dry ingredients add lightly beaten eggs, milk and butter. Mix with a fork until ingredients are just combined. Drop a tablespoon of mixture into patty pan or greased muffin tins.

Bake in moderate (180 degrees Celsius) oven for approximately 20 minutes.
