Mountain Dew Cheesecake by Brook

Ingredients

Syrup: - 2 C Sugar - 1/2 C Light Corn Syrup - 1 C Mountain Dew Soda Crust: - 1 package Graham Crackers - 5 tbs melted butter Filling: - 16 oz (2 packages) softened cream cheese - 14 oz (1 can) sweetened condensed milk - green and yellow gel icing coloring

Instructions

1. Making the Syrup: In a small sauce pan, dissolve sugar in mountain dew and corn syrup. Using a candy thermometer, bring the syrup up to 230 degrees Fahrenheit. Once it reaches this temperature, turn off the heat and let sit until room-temperature.
2. Making the Crust: Crush the graham crackers. Mix with the melted butter. Press into the spring-form pan (or the bottom of a 9" pie pan). Put in fridge until it sets.
3. Making the filling: Beat together the cream cheese and condensed milk. Add in about 1/2 C of the room-temperature syrup. Mix well. Take out about 1/4 of the mixture. Color the small amount yellow and the large amount green.
4. Putting it all Together: Pour the green filling into the pan with set graham cracker crust. Add yellow on top and swirl it into the green. Refrigerate until set.
