Veggie Stuffed Mushrooms by Bradley7

Ingredients

20 medium-large mushrooms 1/2 cup broccoli finely chopped 1/4 cup carrot finely chopped 1 tbsp. onion finely chopped 1/2 cup bread crumbs 1/2 cup shredded cheddar cheese 1/8 tsp. salt 2 tbsp. butter or margarine, melted

Instructions

Preheat oven to 400 degrees. Cut stem out of mushrooms, discard. Chop 1/4 cup of stems into tiny pieces. Combine with broccoli, carrot, onion, bread crumbs, cheddar cheese, salt and melted butter. Stuff into cored centers of mushrooms. Bake 15-20 minutes until mushrooms are soft and tops are lightly brown.
