Grilled Chicken, Basil & Spring Greens by Bender76

Ingredients

70 g chicken breast, no skin 120 g drained four bean mix, rinsed 2 medium asparagus spears, trimmed, halved 0.2 medium avocado, sliced 1 ½ g fresh basil, torn 25 g broccoli florets 100 g cos lettuce 25 g frozen peas 20 g snow peas, trimmed 5 ml lime juice

Instructions

Grill the chicken. Meanwhile boil broccoli and asparagus for 2 minutes. Add the snow peas and peas. Cook for 1-2 minutes.

Remove chicken from pan and toss in four been mix for 2 minutes until heated through.

Coarsely chop lettuce and combine with the basil, broccoli mixture, avocado and four bean mix. Season with lime juice, salt and pepper and gently toss.

Top mix with chicken. Serve and enjoy.
