Cabbage, Daikon, and Ginger Salad by Allen Neighborhood Center

Ingredients

2 cups shredded Veggie Box red cabbage 1 1/2 cups shredded or julienned carrots 1 1/2 cups shredded or julienned Veggie Box daikon 2 Tbsp freshly grated ginger (about a 1-inch piece) 1/4 cup rice vinegar 1 Tbsp soy sauce 1 Tbsp sesame oil 1 tsp honey or maple syrup Sesame seeds (black or white) Optional: sliced green onion for topping Optional: mix with cold soba noodles

Instructions

Shred or julienne the cabbage, carrots, and daikon radish. Mix the cabbage, carrots, and radish together in a large bowl. Place the rice vinegar, ginger, soy sauce, sesame oil, and honey in a jar and shake vigorously until combined. Toss dressing with shredded vegetables then top with sesame seeds and green onion if using.
