Roasted Sweet Potato Jack-o-Lantern Faces and Ghosts by Allen Neighborhood Center

Veggie Box Red Norland Potatoes Veggie Box Sweet Potatoes Olive Oil Sea Salt

Instructions

Preheat oven to 400° F. Coat the bottom of a non-stick cookie sheet with olive oil. Wash and peel potatoes. Slice potatoes in 1/4" thick slices. Use a small knife to cut out jack-o-lantern faces into the sweet potatoes. For the ghosts, use a large diameter plastic straw to cut out the eyes. Place the faces onto the greased baking sheet in a single layer, rubbing them gently with olive oil, then turn them over. Sprinkle lightly with sea salt. Bake for 20 minutes, or until tender.
