Blackened Redfish (works with most fish) by
Ingredients
1/2 t. onion powder
1/2 t. garlic salt
1/2 t. red pepper
1/2 t. dried basil crushed
1/4 t. white pepper
1/4 t. thyme crushed
1/4 t. black pepper
1/8 t. sage
1/4 c. melted butter
Instructions
Mix spices. Brush small amount of butter onto fish. Pat spices into fish. Put skillet on coals. Heat 5 minutes till water sizzles. Place fillet in pan and drizzle 2 t. butter over fish. Grill 2 1/2 -3 minutes till blackened. Turn, drizzle with 2 t. butter till blackened and flakes easily.
