Lemony Arugula or Kale Salad by Emi2

Ingredients

For Dressing: -Lemon Juice -Salt & Pepper (Don't over or under do it with the salt! Makes all the difference) -Olive oil -Optional: Lemon zest -Optional: Flavors of choice, examples: Italian seasoning, chopped herbs such as parsley, mint, etc, dijon mustard, sesame oil, lime For Salad: -Arugula / Kale / leafy green of choice -Optional: Walnuts -Optional: Carrot slices

Instructions

1. Make a simple salad dressing at the bottom of a bowl by combining the lemon juice with salt & pepper (Don't over or under do it with the salt! Makes all the difference), and any added flavors you like. Whisk while drizzling in olive oil to combine.

2. Add in arugula and walnuts, toss well with dressing. Optional add in carrot.

Optional: Leave the dressing at the bottom of the bowl and place the rest of the ingredients on top without tossing for a meal prepped salad that won’t get soggy.
